Gluten Free Shortbread

So I am going to have a stall in two markets, one is on the 6th (Sun) and the other on the 13th (Sun) of December. Both are in North London. I will be very happy if anybody who lives nearby wants to try out my Japanese/Japanese-Western fusion Sweets and come to see me there. 🙂

The market venue and the date are fixed but the thing which is not fixed yet is what I should bring to those markets – my products.

There is so much demand for Gluten free food these days and I have been developing some. Luckily many of Japanese sweets are originally Gluten free and Dairy free.

Gluten Free Kinako Shortbread with Sesame Seeds

I have this signature biscuit “Kinako Shortbread‘ which is the Shortbread with Japanese ingredient ‘Kinako‘ and white sesame seeds. I know it tastes good and I have sold it before. So I want to try changing it into Gluten Free biscuit this time.

The texture came out slightly rougher than the normal Shortbread  but so far so good. Gluten Free option did not change the taste/flavour. I am quite satisfied. 🙂

Gluten Free Matcha Shortbread

The next Shortbread with another Japanese flavour has to be ‘Matcha (Green Tea) Shortbread’ of course. I tried two batches, however, it was not as easy as Kinako Shortbread. The second one came out much better but some bubbling reaction happened during baking and the texture became rough.

Anyway the taste was OK so I hope I can find a way to make a smooth batch soon.

Now, I have to move onto next recipe. The clock is ticking …

      • Thank you! It’s taken a long time to get back to writing. It’s amazing how once you stop, it’s so easy for the weeks to slide away and then suddenly months have gone by, too. There are a couple of other blogs I follow that also stopped blogging around the same time. Sometimes it’s nice to have a break I think, but on the other hand, now I have to build up readers again. Oh well… you take the salt with the sugar, right?
