Dorayaki with Matcha Custard Cream Part1 – Soft & Moist ‘Dorayaki’ Pancake

I made ‘Dorayaki‘ Japanese Pancake and posted here at the beginning of this year. Although it was good enough for me I was not convinced that it was the best I can make so I did not include the recipe to share it with people. I have tried making Dorayaki many times since then and now I think I have the best recipe which I can be proud of.

So here it is…

Dorayaki (Japanese Pancake)

This recipe gives you a very soft and moist Pancake which is perfect for Dorayaki. Make one side smooth brown surface and the other side with a bouncy airy texture.

[Ingredients] (For 5-6 pairs ‘Dorayaki’ Pancake)

  • 60g of Plain Flour
  • 20g of Glutinous Rice Flour (‘Shiratamako‘)
  • 1/4 Tsp of Bicarbonate of Soda
  • 1 Egg
  • 60g of Granulated Sugar
  • 1 Tbsp of Honey
  • 40ml of Water

[Direction]

Mix an egg and Granulated Sugar in a bowl and whisk well. When the mixture becomes airy add in Honey and Water

Sieve all the dry substances together and add in to the egg mixture. Mix well till all combines and becomes a creamy texture

Make sure a wide frying pan is placed securely horizontal. Oil the pan with a very tiny amount of vegetable oil and warm it at a low to medium heat. Pour one Tbsp-full of the Pancake mixture in the middle of the pan and spread it out into a circle of Diameter of about 8cm by using the back of the spoon. Place a lid over the pancake

*Do not oil the pan excessively or it gives an uneven bake

After baking for about 1+ minute with a lid on check the pancake. If you see many bubbles on the top of pancake and the edge is slightly drier it is time to turn it over

Turn it over by using an oiled spatula and a pointy tool such as a bamboo stick. Bake the other side for about 10 seconds. Remove the pancake from the heat and place it on a plate. Keep baking pancakes with the rest of the mixture

*Whilst baking the rest of all Dorayaki it is advisable to cover all the baked ones with a damp kitchen towel to keep them moist

Leave the baked Pancakes under the damp kitchen towel until they cool down

 

Dorayaki with Matcha Custard Cream

When the Dorayaki Pancake cools down sandwich plenty of Matcha Custard Cream between two pieces of Dorayaki Pancake. (How to make ‘Matcha Custard Cream’ will follow this post)

Can you see many air bubble? That is the sign of Good Dorayaki Pancake.

Serve it with Tea, Coffee? or ‘Sencha‘ Green Tea like I had this time.
