Apple & Rhubarb Coconut Crumble Cake (Dairy Free)

What would you make when you have only one stick of rhubarb in your refrigerator? Most of the time I cook rhubarb with some apples and dried fruits and make some compote to go with vanilla ice cream or plain yogurt, but one stick of rhubarb? Surely it is too small quantity to make a dessert. Rhubarb contains lots of moisture and that is why it is suitable to use for making compote. I thought it would be great if I could use the juice from it to moisten a cake.

In my mind rhubarb is also strongly connected with crumble, so I got the image that juicy rhubarb compote on top of a well baked cake with a cluster of crumble on the top too … So basically I decided making a cake with compote and crumble, with everything combined together 🎂

Mochi Dango

As a part of the story of ‘Hanami’ (Cherry Blossom viewing) I have introduced a sweet called ‘Hanami-Dango’ in April. It is a tri-coloured Mochi on a skewer which is a traditional and popular sweet in Japan. Yes, it is a tradition that Hanami-Dango is composed of three balls in green, white and pink colours. I also explained why it has to be in those colours and why in that order. However, It is my nature to try arranging things to create something different and Dango is no exception so I made un-traditional Dango.

Raspberry & Chocolate Square

Valentine’s Day has arrived. I have introduced my ‘Raspberry Chocolate Heart’ for this special day in my previous post. Whilst making the Chocolate Heart I got an idea for improving the look of the sweet.

This is it! It is using exactly the same ingredients with the previous Raspberry Chocolate Heart but I made it into a little more western sweet look.

It has been for quite a while since Coconut Oil became popular in the world. People say it is much healthier than any other vegetable oil or Butter. I was trying not to ride on this trend but just recently one pot of Coconut Oil has appeared on my kitchen shelf. So I have to start going into the usual mission of searching for healthy but tasty things.

Blackberry Custard Tart

I like foraging. Although I hardly do any foraging myself I like the idea of it. Of course I hate the recent new foragers who never consider how nature’s cycle works and remove all mushrooms they can find from the area even before mushrooms open the umbrella. It is becoming a great threat to forests in the UK. That is outrageous! Nothing remains in the forest if people keep doing this.

That is not what I do. My foraging is much more in a smaller scale … such as Blackberry Picking. However, it does not seem a good season for Blackberry this year. It might be the problem where I live but I could get only handful of them.

Anyway, there is a sweet I always make in Blackberry season.

Cherry Wrap Manju with Matcha Green Tea

Thia is a Japanese song for Children. “Come here, Spring. Hurry up, Spring”. It is sung from a child’s point of view. It must be the feeling of lots of people right now.

It is a weird winter this season. It started so mild and then suddenly freezing! In many area in the world it seems like snowing a lot now or even a blizzard. It was the same here in London. Because it was so mild we did not need to use central heating and I did not even wear any woollen jumper for a long time and then it became so cold last week. We are lucky that the temperature is getting slightly milder now.

However, for the people who are fighting with the snowy environment I just want to say to “Keep warm & safe and also Have a Break”. Maybe with a hot ‘Matcha‘ Green Tea and a good Japanese Sweet to make you feel relaxed and keep you going. You cannot do anything productive if you are exhausted.

The sweet in this photo is ‘Cherry Wrap’ Manju with ‘Matcha‘ Green Tea. It is a Japanese style crepes with the real Cherry Blossom I preserved myself wrapping sweet Azuki bean paste. It feels like the winter has just started but it will be gone in 2 or 3 months time. Then we will see lots of Cherry Blossom again. Hope this Cherry Wrap gives you a warmth in your mind by thinking the lovely season awaits ahead of us.

It has been Blackberry season in England. It is good to eat seasonal food. That is Macrobiotic Diet. I am very disappointed that I managed picking them only once this season … 😦 It is nearly the end of the season now so it is very unlikely that I could get any more decent berries …

During the season in almost every year I make a tart with Blackberries, except for this year. But this year I made cup cakes with them instead. I have to say it was rather successful! I am annoyed that I could not make the tart but I am happy about these cup cakes so that I am sharing the recipe here with you.
