I was eagerly waiting for Sping to arrive for so long. I felt winter lasted forever but now it is spring. I see lots of posts of Sakura🌸 Cherry blossoms on Social Media Network particularly from Japan. In London Cherry blossom has started to open too. Some has flowered even in March by being confused with the strange weather this year. It is the season I like the most.
Although it is supposed to be a cheerful season it started to be rainy this week in England. When I see a grey sky I need some sweet that reassures me it is spring. The Colour scheme of the sweet came into my mind first – Pink! Then I thought of Strawberry Jam. I know Strawberry is a summer fruit in England but the Strawberry in my mind is light pink not that vivid red of summer Strawberry.
Strawberry Financiers
I used these Strawberry Jam pellets made of Strawberry Puree. You add them into dough and bake. During the baking process it turns into Jam. Fantastic!
If you don’t have these but want to have some Strawberry in your Financiers you just need to use Jam in the middle of the dough.
[Ingredients]
- 2 Egg white
- 60g of Sugar
- 1 tbs of Honey
- 60g of Unsalted Butter
- 30g of Plain Flour
- 30g of Almond Powder
- 2-3 tbs of Desiccated Coconuts
- 2-3 tbs of Strawberry Jam pellets
[Direction]
Melt Unsalted Butter and leave it to cool down
*You normally use burned Butter for Financiers but I wanted to taste and smell Strawberry so I just melted Butter and didn’t burn it
Whisk Egg White whilst adding sugar divided into 2-3 times. When it is whisked to a very stiff peak add in Honey
Sift Almond powder and plain flour together and add in to the whisked egg white
Add in cooled melted butter and mix well
Mix in Desiccated Coconuts and Strawberry Jam pellets if you have them. Divide it into baking cups
*if you use normal Strawberry Jam, half fill the baking cups and make a small whole in the middle. Scoop in some Strawberry Jam and cover it by adding some more dough on the top
Place the tray with baking cups in the preheated oven at 200℃. Bake for about 20 minutes. When the top surface becomes light brown remove the tray from the oven and cool them down. Serve it with a dust of icing sugar
